    Fruitcake. It’s a confection that seems to generate a lot of debate; people either love it or hate it. The royals, however, seem to be dedicated to these fragrantly spiced, fruit infused cakes.

    When Prince Harry and Meghan Markle broke tradition in 2018 with their Amalfi lemon and English elderflower cake, they broke a fruitcake tradition that has spanned over centuries. This royal custom dates back to the Middle Ages.

    Chris Dodd, a London based pastry chef, explain to Vogue that the traditional English wedding fruitcake is, “an elaborate mixture of re-constituted dried fruits, which have been soaked in fruit juices and an alcoholic beverage such as port, sherry, rum, or even whiskey. To these, a dark brown sugar is added, together with a mix of fragrant spices, butter, and flour. The final product is then coated in a marzipan layer, followed by royal icing, to create a smooth and elegant finish.”

    Queen Victoria, Queen Elizabeth and Price Philip, Prince Charles and Princess Diana, Prince Andrew and Sarah Ferguson, and Prince William and Kate Middleton all stuck to the age-old tradition. But where does this convention come from?

    Fruitcakes were served at medieval feasts, and thereafter was served at all important celebrations such as Easter, Christmas, weddings, and christenings. First and foremost, the cake rose in popularity because it remained in good condition for a long time (since there were no refrigerators).

    There are, however, some more superficial reasons for the persistence of the ancient cake flavour through time. Apparently, the fruitcake was a symbol of wealth and prosperity because of the ingredients used to make it. Similarly, the cake was said to be a representation of the British empire – it comprised of  ingredients (spices for example) that came from all over the world.

    One other, huge reason is that a fruitcake allows the confectioners much more time to elaborately adorn the cake. We’re all aware that the royals are known for their massive, multi-tiered, over-the-top cakes. Creating those masterpieces takes time! The sugar-paste flowers which were used to decorate Prince William and Kate Middleton’s cake took five weeks to make. If they used a cake that goes off quickly, it wouldn’t have been edible by the time the wedding day arrived.

    Finally, the royals have a tendency to stick to tradition. Once it starts, it’s pretty difficult to break.

    As the first joint task of the newlyweds, cutting the wedding cake takes on a much more symbolic meaning. For a royal couple, however, this is amplified even further.

    Royal cakes often have to be large enough to serve 2 000 pieces for the wedding guests as well as charitable organisations. For this reason, they’re often larger than life. Let’s take a look back at what the British monarchy feasted on for their big days.

    Queen Victoria and Prince Albert – 1840

    As the first marriage of a reigning English Queen for 300 years, this wedding was one to take note of. In fact, their cake set a new standard for wedding cake design. The three-tier English plum cake weighed in at a whopping 300 pounds (136 kg) and was decorated with Roman-style sculptures of Britannia, busts of the couple and a model of the Queen’s favourite dog.

     

    Her Majesty The Queen and The Duke of Edinburgh (1948)

    This 9-foot (2.7 metre), 500 (226 kg) pound fruitcake featured four tiers and produced 2 000 slices that went to the wedding guests as well as nearby charities and organisations. As the wedding took place shortly after WWII, rationing was still in place. As a result, many ingredients had to be flown in, earning this treat the nickname, “the 10 000 mile cake”.

    The Prince of Wales and Lady Diana Spencer (1981)

    Although the royal couple actually had 27 cakes at their reception, this 5ft (1.5 metre) tall, 255 pound (115kg) creation was the official one. The fruitcake featured five tiers and was decorated with the family coat of arms, the couple’s initials, and flowers.

    Prince William and Catherine Middleton – 2011

    Made by Fiona Cairns, Prince William and Kate Middleton enjoyed an 8-tiered, 3 foot (0.9 metre) traditional fruit cake decorated with cream and white icing in the Joseph Lambeth technique where rows and rows of intricate piped details and garlands are created. It took Carins and her 50-person team five weeks to construct the 900 delicate sugar-paste flowers that adorned each tier.

    Prince Harry and Meghan Markle (2018)

    Designed by Clare Ptak, the lemon-flavoured cake was soaked in an elderflower syrup made at The Queen’s residence in Sandringham from the estate’s own elderflower trees. The cake was covered with buttercream and decorated with 150 fresh flowers.

    As with many practices surrounding weddings, the groom cake comes from deeply rooted traditions. Beginning in the late 19th century in England this form of cake gained popularity across the world quite quickly.

    It started as a result of perceptions that the traditional wedding cake appeared much too feminine for the groom. As such, a special confectionary treat was made for the man. It was often a liquor-infused fruit cake.

    At the time the tradition started, a legend formed. The story goes that single women would take a piece of this cake home and put it under her pillow as she slept, in the hopes of dreaming about her future groom. Sleeping on a slice of cake doesn’t seem too appealing, but hey, perhaps it’s worth it for a glimpse into the coming years.

    These days the groom cake serves as a gift to the groom from his partner. They should have the cake made especially for him, ensuring that it incorporates his personality, interests, and favourite flavours. At the end of the wedding, the cake is cut up, boxed, and given to guests to take home.
